Ingredients
Egg 1
Cornflour 2 Tbsp
Chicken thigh (boneless and skinless) 1/2 kg
Corn oil 2 Tbsp
Salt and Pepper 1/2 tsp each
For the sauce
Garlic 1 clove minced
Ginger 1 inch grated
Soy Sauce 2 Tbsp
Water 1 Tbsp
Sesame oil 1 tsp
White Vinegar 1 1/2 Tbsp
Brown sugar 1 1/2 Tbsp
Sesame seeds 2 Tbsp
Oyster Sauce 1 Tbsp
Cornflour 1 Tbsp
Spring onion to garnish
Method
1. Whisk together the egg, 2 Tbsp cornflour, salt and pepper. Cut the chicken thighs into one inch pieces. Toss the chicken in the mixture. Set aside.
2. Heat the oil in a wok on a medium high heat. Add the chicken along with the egg mixture to the hot oil. Cook until golden brown, taking care not to stir too much. It should take around 8 minutes. Drain off excess oil.
3. While the chicken is sizzling away, it’s time get the sauce ready. Mix the Sauce ingredients together in a small jug or bowl.
4. When the chicken is cooked through, pour over the sauce. You will see the sauce quickly thicken and coat the chicken beautifully as you stir it in.
5. Add some sliced spring onion as you take it off the heat.
Serve with plain boiled jasmine rice or egg fried rice. Enjoy!
